panqueques

This has nothing to do with Peru.  Or Cusco.  But I HAVE to share this revelation.

Pancakes are quite the popular dessert dish here.  Tonight at dinner, I saw on the dessert menu pancakes with honey.  Being quite a honey lover, I have no idea why I had not tried this before. So low and behold, I came home and found an incredible recipe for baking-soda free pancakes (as that was my missing ingredient). 

Let me just say, they were incredible.  In fact, I think possibly the best pancakes I have ever had.  So light and fluffy.  If anyone has an impulse to make pancakes, try this recipe and drizzle honey on top instead of syrup.  Fresh peruvian honey, preferably.
